I find that I do the bulk of my “leisure” cooking on the weekends as one does. So here is my Weekend Recap. I think this will encourage me to document more of my meals on here too. Aiming for more regular posts on here (heh sorry)! Read on for this past weekend’s meals…
Friday - Pork Meatballs and Roasted Veggies
Last Friday, I opened up the fridge after work to find 1/2 lb of ground pork, 1 head of cauliflower, and a bag of carrots left in the fridge. I decided to roast the vegetables - tossed them both with salt, pepper, and some dried herbs (no fresh herbs on hand) and threw them in a 400F oven for 20-30 minutes. Carrots may take longer depending on its size.
For the pork, I pulled out my savory, spicy, meatball “recipe” from earlier this summer. This time, I didn’t add any additional salt and reduced the amount of chili bean paste. I also added a few dashes of fish sauce and a few teaspoons of water until I got the consistency I wanted.
Top tip: Start the vegetables first. The meatballs can be throw together and fried off on a skillet in the time it takes to roast both vegetables.
Saturday Dinner - Poached Cod in Tomato Curry
Saturday night was inspired by this recipe from Bon Appetit. My husband and I try to have fish at least once a week and this totally hit the spot. We used to do “Fish Sundays” to reduce our meat intake but I guess now it’s any day of the week. So so good - please try it out!
Here are the following substitutions I made based on what I had in the fridge/wanted to eat:
No cardamom pods - Whole Foods didn’t have them either. Oh well, what’re you going to do~
Cilantro on top for me, basil on top for husband
Sauteed kale underneath for extra veggies (if this is your whole meal)
Lime wedge on the side
Saturday Dessert - Apple Crisp
For dessert, I found this recipe for an apple crisp on Cup Of Jo by the lovely Jenny Rosenstrach and it is a gamechanger.
Side note - Don’t hate me but I don’t like warm/cooked fruit. I know I know, it’s ridiculous. For someone who loves cooking and eats pretty much anything, cooked fruit (maybe it’s the texture?) just doesn’t do it for me. I think the only exception are strawberries.
THEREFORE, the apples are not why I am fan-girling all over Jenny’s apple crisp recipe. THE CRISP YOU GUYS. THE CRISP. She found a way to make the crunchy, sugary, buttery topping without squishing dry ingredients into butter. All it takes is some flour, sugar, salt, cinnamon, and drizzled melted butter all over the top. It was so good and easy that I am a list of things to put it on top of that is not warm fruit. Or maybe I should just bake it on its own and sprinkle it over ice cream…..
Before you all get in an uproar on why I made apple crisp when I despise cooked fruit - apple crisp is my husband’s favorite dessert so no worries, he inhaled the entire pan.
